Known in Central America since the thirteenth century, vanilla is a lianous plant of the orchid family widely used in the perfume and food industries. The extraction of vanillin, the aromatic aldehyde that gives the plant its characteristic scent, takes place through the use of volatile solvents or by hand by infusion in alcohol. There are around 150 varieties of vanilla: the Bourbon variety, produced on Reunion Island, is particularly popular.
